Whoopie Pies
Cookie Recipe:
- 4 c flour
- 1 c cocoa
- 2 c sugar
- 2 tsp baking soda
- ½ tsp salt
- 1 c shortening
- 2 eggs
- 2 tsp vanilla
- 1 c thick sour milk
- 1 c cold water
Icing Recipe:
- 3 c powered sugar
- 1⁄3 c butter, softened
- 1-½ tsp vanilla
- 2 tbsp milk
Mix powered sugar and butter. Stir in vanilla and milk. Beat until frosting is smooth.
- Cream together sugar, salt, shortening, vanilla and eggs. Sift flour, soda and cocoa together. Add this to the first mixture alternately with milk and water. Add slightly more flour if milk is not thick. Drop by teaspoons on greased cookie sheet. Bake in preheated 400 degree oven about 8 to 10 minutes. Icing in between cookies.
- Put icing on flat side of cookie and make a whoopie pie sandwich.
This recipe is from my great grandmother and is Pennsylvania Dutch.
