Blackberry Cobbler
Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 1 cup water
- 1½ cups flour
- ¼ tsp salt
- 2¼ tsp baking powder
- 1⁄3 cup milk
- 2 cups fresh or frozen blackberries
- 1 tsp cinnamon
- 2 Tbsp sugar
- Melt butter in 10-inch baking dish. Set aside.
- Syrup: Heat sugar and water until sugar dissolves. Set aside.
- Mix flour, salt and baking powder. Cut butter into flour until particles are like fine crumbs.
- Add milk and stir with a fork until dough leaves sides of bowl.
- Turn onto floured board. Knead 3 or 4 times. Roll out to 11” × 9” × ¼” rectangle.
- Spread berries over dough. Sprinkle with cinnamon and roll up like a jelly roll.
- Cut into 1¼” thick slices. Place in pan over melted butter.
- Pour syrup around slices.
- Bake at 350° for 1 Hour.
- 15 minutes before removing from oven, sprinkle 2 Tbsp sugar over crust.
I double this recipe and bake in a 9” × 13” pan.
I also eat it warm with vanilla ice cream.
