Easy Ambrosia
Ingredients:
- 1 cup mandarin oranges, drained
- 1 cup crushed pineapple, drained
- 1 cup shredded coconut
- 1 cup small marshmallows
- 1 cup low-fat sour cream
Mix all ingredients. Chill and serve.
This has been a Thanksgiving staple in my family, but it's so good that I've made it to enjoy on any day of the year. The light citrus mandarin and tangy pineapple are balanced by bursts of sweetness in a creamy base that allows the flavors to intermingle. It's even better as leftovers, once the citrus and sweet have had time to dissolve into the “nectar of the gods.” Leftovers, though, may be hard to come by, if you're sharing a bowl with family or friends.
